Easy Breakfast Ideas For Your Morning Routine: Cinnamon Banana Pancakes

Whether you’re working from home or easing into the weekend, there’s no question that a good and hearty breakfast really helps to kickstart your day. We’ve got the perfect quick recipe for you – pancakes loaded with bananas, with an added dose of cinnamon.

You can customize this recipe any way you like it – add sliced strawberries and whipped cream for a more indulgent treat, or perhaps some chocolate chips if you’re a chocolate fan. Also, with all pancakes, it won’t be complete without some maple syrup or honey by the side. Let’s get things started!

INGREDIENTS

1 ripe banana (It should have some browning)

2 medium-size eggs

85 ground almonds (You can substitute this with wholemeal flour if needed)

1/4 tsp cinnamon powder

2 tsp sweetener, like brown sugar

50g chopped pecans (Optional)

Sunflower Oil, for frying

Maple Syrup or Honey for serving

METHOD

  • Mash the banana in a bowl using a fork
  • Add the mashed banana to the Chef Elite mixer bowl and crack in the eggs
  • Add in the ground almonds (or wholemeal flour), cinnamon, sweetener and milk and using the whisk on speed 1, mix well.
  • Add half of the pecans (or any other addition you want) and mix again on speed 1 until just combined. Don’t overmix!
  • Pour the mixture into a jug and leave to stand for 3 minutes.
  • Heat a non-stick frying pan over medium heat. Lightly oil the pan and drop in the batter in rounds.
  • Cook the pancakes on their first side for 1 – 2 minutes or until small bubbles appear and pop on the surface.
  • Flip the pancakes over and cook on the other side until lightly golden.
  • Serve with syrup or honey, and other added fruits of your choosing!
