No-Bake Creme Brulee (From Completely Delicious)

This creme brulee recipe is fuss-free and is a great choice to whip up at home without an oven! An indulgent custard treat packed with rich vanilla flavour, this version uses thickener to set the custard, doing away with the baking process. The taste is almost as good as the real deal!

  • 1 cup heavy cream
  • ½ cup whole milk
  • ½ cup granulated sugar
  • 1 vanilla bean
  • 4 large egg yolks
  • 2tbsp cornstarch
  • (Optional) granulated sugar for bruleeing

  1. In a medium saucepan, combine the cream, milk and sugar. Use a sharp knife to scrape the vanilla beans from the pod and add to the saucepan. Place over medium heat and stir to dissolve the sugar. Heat just until bubbles appear at the edges and mixture is steaming (do not bring to a boil).
  2. Meanwhile, whisk together the egg yolks and cornstarch in a medium bowl. Add the hot cream mixture in a slow steady stream while whisking constantly.
  3. Pour mixture back into the saucepan and return to medium heat. Cook, stirring constantly with a spatula to scrape the bottom until mixture is thickened. This will take 3-5 minutes. Once thickened, cook for an additional 1 minute, while continuing to stir.
  4. Remove from heat and pass the custard through a mesh strainer to remove any lumps. Spoon into individual ramekins. Place in the fridge, uncovered, to set up for at least 2 hours.
  5. When ready to serve, sprinkle ramekins generously with granulated sugar. Working with one at a time, pass a kitchen torch over the surface until sugar melts and caramelizes. Serve immediately.

Five Ingredient Tiramisu (From BlueApron)

Tiramisu might sound fancy and a pain to make, but the delicious coffee-tinged treat does not have to be difficult. This five-ingredient Tiramisu is a great finisher to your family meals, and will definitely be a crowd favourite!

  • 1 cup hot freshly brewed coffee
  • ½ cup and 1tbsp sugar
  • 6oz ladyfinger cookies
  • 1 cup heavy cream
  • 16oz mascarpone
  • (Optional) Cinnamon or cocoa powder for garnish

  1. Add 1 tablespoon of sugar to the coffee, and stir to dissolve.
  2. Whip the remaining sugar into the mascarpone in a large mixing bowl. Place the heavy cream in a second bowl and whip until it becomes stiff. Gently “fold” the whipped cream into the mascarpone.
  3. In a 13-by-9-inch baking dish, layer half the ladyfingers on the bottom, then brush generously with half of the coffee mixture. Allow a few minutes for the coffee to be absorbed by the cookies.
  4. Then, top with half of the whipped cream-mascarpone mixture. Layer the remaining ladyfingers over the top, and brush them with the remaining coffee mixture (again, allow time for the coffee to be absorbed).
  5. Top with the remaining whipped cream mixture. Cover the dish with plastic wrap and place in the fridge for at least 1 hour.
  6. This dessert will get better as it chills and sits but can be served pretty quickly.
  7. Garnish with cocoa powder and/or cinnamon and serve.
