A Perfect Weeknight Treat: Refreshing & Zesty Orange Cake

After a long day of sitting in front of your computer screen replying emails, putting out fires, and completing your tasks for the day, all you want to do is unwind, relax and reward yourself with a nice snack or two.

For those of us who have got a sweet tooth, a sweet little treat always brightens up the day. But consuming the good ol’ brownie or cookie on the daily gets old real quick.

Here’s our solution. Cut through that dessert of yours with touches of zesty, tangy citrus, and you’ve got the perfect weeknight treat that you’ll probably never get sick of.

This orange cake is a quick favourite, with the sweet moist cake balanced with a good refreshing orange zest – it’s easy, light and (don’t say we didn’t warn you) very addictive.

Ingredients

 70 g soft brown sugar
 1 tbsp water
 3 oranges: One sliced thinly, zest and juice of 2
 3 eggs, separated egg whites
 150 g caster sugar
 320 g Ricotta
 1 tsp vanilla extract
 130 ml extra virgin olive oil
 230 g plain flour
 1 tsp baking powder
 ½ tsp salt

Preheat your oven to 160°C.

Mix the brown sugar and water together, and spread this over the base or a loose bottomed cake tin, lined with parchment. Arrange the orange slices over the sugar mixture, and set aside.

Add the egg whites to the bowl of your kitchen machine fitted with the balloon whisk and whisk on high speed until you have stiff peaks. Scrape the egg whites into a separate bowl, and reserve.

Into the bowl of the kitchen machine, add the yolks, sugar and orange zest and whisk on speed 4 for 3 minutes or until fluffy. Add the vanilla, olive oil, ricotta and orange juice and mix on speed 1 until combined. Add the flour, baking powder and salt and mix until combined.

Fold the egg whites into the rest of the mixture and then spoon into the cake tin, being careful not to move the orange slices.
