Combine butter, sugar, egg yolk, cornstarch, all-purpose flour and almond powder.
Mix the batter using your stand mixer until it becomes a dough.
Take a small portion and flatten the dough on your hand.
Place the almond at the centre of the dough.
Wrap the almond using the dough neatly.
Roll the dough on your hands to even out the sides.
Repeat the steps above for all the remaining dough and almonds.
Bake at 160 degrees celcius until golden brown.
Remove your cookies from the oven, leave them to cool.
