Almond London Recipe: Crunchy Chocolatey Goodness for Hari Raya!

Fancy some almond crunch with a douse of rich chocolate coating this Hari Raya? Then you've got to try this crowd favourite Almond London recipe!

 200 g Lurpak Butter
 80 g Icing Sugar
 3 Egg Yolks
 200 g Corn Starch
 125 g Almond Powder
 125 g All Purpose Flour
 300 g Whole Almonds
 100 g Almond Nibs
 500 g Dark Chocolate Melted

Combine butter, sugar, egg yolk, cornstarch, all-purpose flour and almond powder.

Mix the batter using your stand mixer until it becomes a dough.

Take a small portion and flatten the dough on your hand.

Place the almond at the centre of the dough.

Wrap the almond using the dough neatly.

Roll the dough on your hands to even out the sides.

Repeat the steps above for all the remaining dough and almonds.

Bake at 160 degrees celcius until golden brown.

Remove your cookies from the oven, leave them to cool.

After the cookies have fully cooled, dip each cookie into the melted chocolate and transfer them into a mini baking case.
