This dates cake is our tribute to the end of the Islamic holy month of Ramadan, where it is known as the Hari Raya Aidifitri. The first part of the video features the process of baking the cake and the second part focuses on how to dress up the cake with fondant.
Makes two eight-inch Butter dates pound cake.
Soak pitted dates with hot milk and steam for 30 minutes.
Mash into paste.
Beat butter and brown sugar until fluffy, add in melted gula Melaka.
Add in eggs and coconut milk.
Add in sifted cake flour, baking soda and baking powder.
Fold gently to mix well.
Preheat oven to 180 degrees Celsius, line two 8-inch round baking tin with parchment paper.
Divide the batter to two portions and fill into two baking tins, bake for 40 minutes or until cooked.
