Easy Breakfast Ideas For Your Morning Routine: Cinnamon Banana Pancakes

Whether you’re working from home or easing into the weekend, there’s no question that a good and hearty breakfast really helps to kickstart your day. We’ve got the perfect quick recipe for you – pancakes loaded with bananas, with an added dose of cinnamon.

You can customize this recipe any way you like it – add sliced strawberries and whipped cream for a more indulgent treat, or perhaps some chocolate chips if you’re a chocolate fan. Also, with all pancakes, it won’t be complete without some maple syrup or honey by the side. Let’s get things started!


 1 ripe banana (It should have some browning)
 2 medium-size eggs
 85 ground almonds (You can substitute this with wholemeal flour if needed)
 ¼ tsp cinnamon powder
 2 tsp sweetener, like brown sugar
 50 g chopped pecans (Optional)
 Sunflower Oil, for frying
 Maple Syrup or Honey for serving



Mash the banana in a bowl using a fork


Add the mashed banana to the Chef Elite mixer bowl and crack in the eggs


Add in the ground almonds (or wholemeal flour), cinnamon, sweetener and milk and using the whisk on speed 1, mix well.


Add half of the pecans (or any other addition you want) and mix again on speed 1 until just combined. Don’t overmix!


Pour the mixture into a jug and leave to stand for 3 minutes.


Heat a non-stick frying pan over medium heat. Lightly oil the pan and drop in the batter in rounds.


Cook the pancakes on their first side for 1 – 2 minutes or until small bubbles appear and pop on the surface.


Flip the pancakes over and cook on the other side until lightly golden.


Serve with syrup or honey, and other added fruits of your choosing!
