Loaded with fragrant sesame oil and ginger, this homely dinner definitely brings back fond memories at the family dining table.
In a large bowl, season chicken with salt and pepper. Set aside.
In a separate bowl, whisk together sauce ingredients. Toss chicken in 1 Tbsp of the sauce and let it marinate for 10 minutes. Set aside sauce.
In a pan on medium-high heat, heat 1 Tbsp avocado oil and sear chicken until brown. Remove chicken from pan and set aside.
In the same pan, add ½ Tbsp avocado oil, broccoli and carrots. Stir-fry for 2 to 3 minutes until tender-crisp.
Pour in remaining sauce. If you prefer a thicker sauce, add in cornstarch. Add cooked chicken back to the pan to reheat.
Plate and garnish with toasted sesame seeds and green onions.
