Commonly sold as a street snack or in Indian food stalls across Malaysia and Singapore, this savoury fried snack is packed with spices and absolutely delicious. We like to think of it as a savoury donut! The word ‘Vadai’ usually indicates a range of Indian style fried savoury snacks. Other names for it is vadai, vade, wada and wadeh. To make this snack a little healthier, we’ve incorporated brown rice into this recipe.
Making vadai is easier than it looks, but it does needs a bit of planning ahead as you need to soak the dhal and rice for 2 hours beforehand. This will soften it and make it easier to blend later.
