Mini Stollen Bites: Tastes Like Christmas! 🎄

First question: What is Stollen?

Some people think it’s fruitcake, but it’s not. Neither is it a fruit and nut loaf. The best way to describe it is like a light, buttery scone packed with bits of dried fruit and powdered with icing sugar on top. It also has a strong, scented almond flavour thanks to loads of almonds and marzipan going into the dough. This wonderful recipe is made using a Kenwood Chef, which is perfect to chop your almonds, combine your ingredients and give you a smooth, elastic dough to work with.

Second question: What is marzipan and where do I get it?

Marzipan is a confection consisting primarily of sugar or honey and almond meal, sometimes augmented with almond oil or extract. It is sometimes known as almond paste. You can get marzipan in more international supermarkets or e-grocers.


 100 g blanched almonds
 42 g fresh yeast powder
 150 ml low fat milk
 500 g plain flourPlus extra for rolling
 50 g sugar
 1 tsp vanilla extract
 ½ tsp salt
 150 g softened butter
 100 g marzipan
 100 g dried cranberries or a mix of cranberries and raisins
To finish
 100 g butter
 100 g icing sugar



Chop the almonds in the food processor attachment on the high speed outlet of your Chef machine.


Place the yeast in some warm milk and leave for a few minutes.


Then place the flour, sugar, vanilla extract, salt, butter and marzipan in the Chef mixing bowl and knead using the dough hook until the ingredients are combined into a smooth dough and no longer sticky.


Cover and leave for an hour.


Place the dough back into the Chef bowl and knead the dough once again. On a floured work surface, roll the stollen to 1cm thick. Cut the dough into 3 x 5cm sized pieces and place on a baking sheet covered with greaseproof paper.


Cover once again for 15 minutes. WhiIst they are resting, preheat the oven to 180 °C/ Fan 155 °C.


Bake in the oven for approx. 15 minutes.


Melt the butter and gently brush the warm stollen bites. Sprinkle liberally with icing sugar once cooled.


Store in an airtight jar to prolong freshness.
