Let’s face it, your dear old grandmother might have slaved away in the kitchen every night, but this is the Moon Age, and you’ve got things to do and places to be! Fear not, we’ve selected five of the best one-pot recipes for quick and healthy weeknight dinners.

Monday: Chicken, Kale and Mushroom Pot Pie

It’s Monday. You’ve got a long week ahead, and you already feel spent. Time for some hardy comfort food. This stick-to-your-ribs veggie pot pie from BBC Good Food has enough lean carbs to power your work week and will make your vegetarian friend jealous when you bring the leftovers in for Tuesday lunch.

Tuesday: Beef Taco Skillet

As legendary 18th-century Mexican general Antonio López de Santa Anna once said, “It’s Taco Tuesday! Arriba!” Spice up the second day of the week (and forget that you still have three days left) with this cheesy, beefy taco skillet from Sweet C’s. This recipe is quick and comes with a helpful video.

Wednesday: Chicken Tikka Masala

It’s Hump Day, or as we like to call it, One Pot Wednesday. As you cross the halfway mark of the workweek, cross the halfway mark of the globe with a one-pot chicken tikka masala radiating with the exotic flavours of South Asia!

Thursday: Seafood Risotto

Despite the common American saying “thirstier than a whaler on Thursday”, American fishermen from New England did not, in fact, coat their nets in molasses to attract the mermaids that were rumoured to appear on the fourth day of each week. Nevertheless, Thursday remains the perfect excuse to treat yourself to a fast and delicious one-pot seafood risotto. This recipe from Martha Stewart that calls for clams, halibut and squid rings is a real catch!

Friday: Guinness Beef Stew

Whew! It’s Friday. It’s been a long work week, so treat yourself to a beer, and by that we mean this hearty one-pot beef stew with Guinness beer. Note: The alcohol cooks out, so be sure to enjoy with an actual glass of beer – after all, you’ve earned it!

Saturday: One-Pot Pizza

It’s the weekend; time to cut loose with a little pizza. And by that we mean, this cheesy, pepperoni-filled one-pot pizza pasta. It has all the goodness of a pepperoni pizza (or other flavours – see recipe for variants) but with a pasta base instead of pizza crust. It’s easy to cook and easy to eat – perfect for Saturday.

Sunday: One-Pan English Breakfast

I can’t believe how crazy you got last night! What? You don’t remember? Well, after we had that one pot pizza, we all went to this new club and… actually, never mind. Just take some aspirin and enjoy this delicious lazy Sunday English breakfast. A kind of shakshuka, but with baked beans instead of tomato sauce, it has everything you want in a brunch: eggs, sausage, mushrooms, beans, bacon – all in a single pan.
