In Surabaya, spiku Surabaya refers to a three-layered cake, prepared using a different technique. Two batter mixes are prepared, one with naturally produced yellow colour, the other mixed with cocoa powder to produce a dark brown colour. The batter mixes are poured into two different baking tin and baked in the oven. To assemble, the cake is layered on top of the other with a thin layer of fruit jam in between.

Ingredients

MANGO LAYERS (MAKES TWO)
 125 g unsalted butter
 60 g caster sugar
 10 medium-sized egg yolks
 50 g mango puree
 30 g plain flour
 10 g corn flour
 10 g milk powder
CHOCOLATE LAYER (MAKES ONE)
 65 g butter
 50 g caster sugar
 5 medium-sized egg yolks
 18 g plain flour
 10 g cocoa powder
 20 g dark chocolate
FILLING
 mango jam

Instructions

Grease three 6 x 6-inch pans, line and grease again. Set aside.

TO MAKE THE MANGO LAYERS

Cream butter and sugar till fluffy. Add in egg yolks and mix well.

Add in mango puree.

Fold in sieved plain flour, milk powder and corn flour.

Gently mix with a spatula until well incorporated.

Pour into 2 pans, and bake in a preheated oven of 180 degrees Celcius for 18 minutes till cooked (when the skewer comes out clean).

Do the same for the chocolate layer.

TO ASSEMBLE

When the cakes are cooled, place one orange layer and spread the top with jam, top with the chocolate layer.

Spread the top of the chocolate layer with mango jam, top with the other orange layer.

Cut and serve.
