Yields2 Servings

Say goodbye to your regular french toast recipe of frying bread in eggs and milk. This is how you level up your french toast recipe – with a humble box of cornflakes! Yes, that’s right. Just one simple step to coat your toast in cornflake crumbs and frying it in a generous amount of butter results in a delightfully crisped, crunchy outside and a warm filling within.

crispy french toast crusted with cornflakes

 4 slices of thick bread
 2 eggs
 ½ cup milk
 1 tsp vanilla essence
 ½ tsp cinnamon powder
200 g plain cornflakes, slightly crushed but not powdered!

Mix milk, eggs, cinnamon, vanilla essence in a bowl.

Separately, make your sandwich and fill it with your chosen fillings.

Dunk the sandwich generously with the egg-milk mixture. Be sure to coat the sides.

Immediately dunk the sandwich in the cornflake-crumb mixture and ensure that the bread is nicely coated with the crumbs.

Heat up a large pan and drop in a generous amount of butter. When the butter sizzles, place the sandwiches in and fry them. Fry until golden brown and plate.
