Fluffy Durian Pancakes For Durian Lovers!

It’s durian season again, and we’ve got a recipe for you to whip up a decadent stack of these delicious pancakes. Fluffy, tasty and infused with durian flavour – it’s a dream for lovers of the fruit. For this recipe, if you don’t have durian essence, it’s fine to omit it. Choose the flesh of durians that are more creamy and less watery, and be careful not to overbeat the batter as this will result in dense, slightly tough pancakes. Just a gentle folding in of the batter is the key to fluffiness!

For 24 pieces of durian pancakes


 4 eggs, yolks and whites separated
 350 g Hong Kong flour
 4 ½ tsp baking powder
 110 g sugar
 50 g gram durian flesh
 400 ml milk
 5 tbsp butter, melted
 1 tsp durian essence
 icing sugar for dusting



In a bowl, beat egg whites until stiff, then set aside.


In a separate bowl, sift flour, baking powder, sugar and salt together.


Beat egg yolks in another bowl, blend durian flesh and milk together until smooth, then add melted butter.


Stir egg mixture into dry ingredients. Mix until batter is smooth before adding durian essence.


Gradually fold beaten egg whites into batter.


Spoon batter (about 50 gram) onto a hot greased frying pan and cook until the surface is golden brown.


Repeat this step until all batter is finished. Serve warm.
